Ground beef Cheesy Sweet Potato Muffin

Ingredients :

Sweet Potato

Onion

Cheese

Corn flour

Ground beef

Baking powder

Egg

Oat milk

Preparation:

Heat your oven to 375°F (190°C)

Grease a standard 12-cup muffin tin with oil or cooking spray.

Cook the ground beef and chopped onion in a skillet over medium heat until the meat is fully browned.

Drain any extra fat from the skillet.

Let the cooked beef cool down for a few minutes.

Whisk the eggs and oat milk together in a large bowl.

Stir the mashed sweet potato into the wet mixture.

Add the cooked beef and half of the shredded cheese to the bowl.

Mix the flour, baking powder, salt, and black pepper in a separate bowl.

Stir the dry flour mix into the beef and sweet potato blend just until combined.

Spoon the batter evenly into the 12 muffin cups.

Sprinkle the remaining cheese on top of each muffin.

Bake for 20 to 25 minutes until a toothpick inserted in the center comes out clean.

Cool for 5 minutes before removing the muffins from the pan.
